
Getting That Perfect Golden Brown
Ever wonder why some bread has that picture-perfect, golden-brown crust while others look pale and sad? It all comes down to how you handle the heat. We use short-wave IR emitters because they don’t mess around. Instead of wasting time heating up the air around the bread—which is what happens with convection—these hit the dough instantly. It’s direct. It’s fast. And it gets the job done.
Dialing in the Color
The secret to a great crust is all in the intensity. If the heat is too low, you just end up drying out the dough, leaving you with a matte, colorless finish. Not great. But when you crank up the intensity with short-wave IR, you trigger that Maillard reaction (the magic that makes bread brown) almost immediately. The beauty of this is that you can sear the top of the loaf to a crisp without turning the inside into a brick. Now, you have to be careful with your spacing. If the emitter is too close, you’ll burn the “peaks” of your bread while the “valleys” stay white. We usually customize the length and wattage of our units so the heat hits every single loaf on your conveyor belt evenly. No hot spots, no cold spots.
The Hardware Side of Things
Under the hood, we’re talking quartz glass and tungsten filaments. Because the filament has very little thermal mass, it reacts quickly. Here is why that matters: the second your PLC cuts the power, the heat drops. You don’t have to worry about that annoying “carry-over” cooking that often ruins delicate pastries by over-browning them after they’ve already left the heat zone. Plus, we can build these to fit whatever space you’ve already got. Most of our units just drop right into your existing oven setup. Simple.
A Few Things to Watch Out For
High-intensity gear puts a lot of stress on your electronics. If you’re going with a high-wattage array, please—check your wiring. Cheap connectors will fry under the constant heat cycling of a busy bakery. It’s just not worth the risk. One last tip: short-wave IR penetrates deeper than long-wave. If you notice the crust is browning way too fast but the center is still raw, don’t panic. You probably just need to move the emitter further away or dial back the wattage a bit.
